El autor, Irving Quiroz, es un chef mexicano con especialidad en panadería y repostería. Nació en Toluca, Estado de México, donde aprendió el oficio de panadero de su padre y abuelo. Se ha desempeñado como chef instructor y asesor de empresas reconocidas internacionalmente. Ha colaborado en programas de televisión y fue participante del programa televisivo Top Chef México® 2016. Actualmente es director de Aula Sabor, un espacio de perfeccionamiento gastronómico en la ciudad de Monterrey. Irving Quiroz es también autor de Panes mexicanos, libro editado por Larousse en 2014. Pan artesanal en casa contains a selection of sweet and savory breads from various parts of the world, some of them classics, such as baguette, shell, croissant or the blueberry muffin, and others that have gained a presence in Mexico in recent years, such as fougasse, hot cross bun or steamed Chinese bread roll. There are more than 50 bread recipes distributed alphabetically for different occasions.
Irving Quiroz obtained his training as a professional in gastronomy at the Culinary Institute of Mexico. He undertook specialized courses in bakery at the École de Boulangerie et Pâtisserie in Paris, and in pastry at the École des Arts Culinaires et Hôtellerie. His professional career spans more than 10 years: he served as executive chef of Theurel & Thomas, a prestigious Mexican boutique specializing in French pastries; as manager of the Unilever Bakery Technological Institute; as an instructor chef in several institutions, including the Centro Culinario Ambrosía.
